Sashimi (sliced raw fish) is often mistakenly referred to as sushi (vinegared rice with toppings).

Sashimi 刺身(さしみ) is sliced raw fish. Delicious with soy sauce and wasabi. Mmmm-mm.

Sushi 寿司(すし) is anything made from wads of cooked, vinegared rice, and usually accompanied by something like fried egg, prawn, or vegetables. (Yes, sometimes sliced fish too.) The Japanese get really inventive with the toppings and fillings, and many of them are *cooked*, not raw.

Usually it's the food that's cooked, not the Japanese.
