actually, if your entire list is comma-separated (like in English), you don't need quotes, e.g.

animals, ethics, veggie lover

will DTRT.

I think I'd be okay getting lover cred instead of veggie lover cred. :)

This may not be true anymore, since I think the site is moving toward totally comma-separated tagging and credding.
