I especially like Annie's organic white cheese and mac.
I like my grandma's recipe:
Melt 1/2 stick (1/4 cup) butter, mix with 1/4 cup flour. Slowly stir in and melt 8oz of your favorite cheese(s).
Pour over 2 cups cooked noodles. Stir.
Additional ingredients/garnishes as desired.
Bake if you want. (15-20min @350F)
Oh YEAH! Homemade mac and cheese is the shit! My mom used to make it for me.
I, however am a lazier chef. I just mix up mac and cheese out of a box and add a can of chili. BLAM!
Unless I'm making it for a lot of people (as the main dish), it's not a hassle at all. It takes all of 10-15 minutes.
