You have to be very careful about removing the hair, nobody likes a mouthful of hair. Kittens don't have much of meat on them either, so if you're going to make a good amount of stew, you end up skinning, boning, and seasoning a lot of kittens. Finally, herding enough kittens to make a stew for a fancy dinner party is a nightmare.

The other white meat.
Boning and skinning? who taught you to make Gumbo, fool?

Ha! The funny thing about this is I know a guy in Alaska who makes cat stew.
Disgusting
Maybe you should try pigs instead of kittens. There's no fur, but you do have to shave them. No-one likes meat with a full set. It gives entirely the wrong impression.
The fur is the reason that kitten knitting is so critical. Plus it provides a way to use _all_ of the kitten, and thus being more ecological and efficient.
