With the weekend I've just had, I'm not sure how I rate the intelligence of humans relative to cows :-)
Seriously, though, I think there's a correlation between intelligence and carnivorism, (if I were to speculate on causiality, it might be because meat-eaters tend to have to spend less of their time eating, wheras herbivores tend to graze far more of teach day - however, even just because I may have got the causiality wrong, doesn't invalidate the correlation.)
Herbivores tend to taste nicer than carnivores, and are certainly less prone to toxin build up.

Raccoons are brilliant, if horrible, little things, and they taste fairly nasty.
I think we take a smart animal like a turkey, and make it dumb through domesticating it.
Raccoons are not as smart as pigs. They might be smarter than cows and chickens though.
Untrue. People taste just plain nasty, even when they clean themselves regularly.
