I'm afraid I don’t know where her stat is from, but I’m guessing it’ll be from either of the books she cites: Michael Pollan’s ‘The Omnivore’s Dilemma: The Search for a Perfect Meal in a Fast-Food World’ or Chris Goodall’s ‘How to Live a Low-Carbon Life’ - probably the latter.
